Providing food was a challenge on the trails from the East to California, and the chuck wagon was invented as a horse-drawn food truck. The next generation of mobile kitchens roamed the streets of Los Angeles and San Francisco, competing with a small army of vendors with pushcarts and other street foods. They filled a need and provided a living for new immigrants to popularize their cuisines, and some great fortunes were made in the process.
