Mexican-Style Pork
Ingredients:
1 pound boneless pork shoulder cut into one inch cubes
(may substitute with beef, chicken, or fish)
4 tomatillos
2 medium size tomatoes
2 serrano chili peppers
half of a medium onion finely chopped
3 cloves garlic, minced
2 teaspoons Knorr tomato bouillon
1 tablespoon olive oil
Boil tomatoes, tomatillos and serranos. set aside. In a large skillet, heat olive oil. Add onion and garlic. Sauté for about 3 minutes. Add the pork. Cover and allow to cook for about 10 - 15 minutes or until brown. Put the tomatoes, tomatillos and serranos in a blender. Add the tomato bouillon and the water used to boil the vegetables (about 2 cupsof water) and blend.Once the pork is brown, add the tomato mixture. Bring to boil, then cover and simmer in low heat for approximately 1 hour. May be served with beans and rice.
