Meatloaf w/Vegetables
Ingredients:
1-1½ Lb Ground Beef
½ Lb Ground Pork
½ Medium Onion, Finely Chopped
3 Medium Carrots, Finely Chopped
3 Ribs Celery, Finely Chopped
¼ Lb Mushrooms, Finely Chopped
1 Medium Bellpepper, Finely Chopped
2 Cups Bread Crumbs
2 Eggs, Lightly Beaten
½ Cup Milk
Salt & Pepper To Taste
Preheat oven to 375 degrees. Mix together all ingredients. Place in a loaf pan. Bake for 1 to 1 1/4 hours. Let cool for 10 minutes. Slice and serve with rice, mashed potatoes or noodles. Serves 8.
