Meat Stuffing

Ingredients:
1 Lb Ground Beef, Lamb, Pork Or Turkey
1 Medium White/Yellow Onion, Finely Chopped
1 Or 2 Cloves Garlic, Minced
2 Tbs Extra Virgin Olive Oil
½ Cup Vegetable Or Tomato Juice
1 Stick Cinnamon
½ Cup Dry White Wine
Salt & Pepper To Taste
1 Cup Cooked Rice Mixture (See Vegetarian Stuffed Vegetable Recipe)
2 Tbs Grated Parmesan


Saute onion and garlic in a large skillet in the olive oil for 3-4 minutes or until translucent. Add the ground meat and brown it well. Pour off any excess fat and add the wine, juice and cinnamon stick. Season with salt & pepper. Cook over medium heat until liquid is reduced and the meat sauce is thick. Transfer to a bowl and add the grated cheese and mix in the rice. Stuff vegetables and cook as in vegetarian stuffed vegetable recipe. Serves 6-8.
