Chapli Kebabs
Ingredients:
1 lb. ground beef or lamb or veal or a mix
1 ts. Ginger paste
1 ts. Garlic paste
Jalapeño chopped to taste
½ small onion, chopped finely
1 ts. Ground cumin
1 ts. Salt to taste
1 tb. Coriander seed, toasted and crushed
½ ts. Cayenne pepper to taste
2 tb. Yogurt
1 egg
½ ts. Ground garam masala
Preparation:
Mix the ground beef with ginger, garlic, jalapeno, onion, ground cumin, salt, crushed coriander seed, cayenne, egg and garam masala. Add the yogurt and mix well.
Make 12 small patties, flat and round. Lay them on a cookie sheet. Heat a non stick pan and fry the patties without any oil on medium heat until brown on one side. Flip patties over and cover and cook other side till brown and cooked through. 2-3 minutes on each side. Drain on paper towels and serve in small buns or pitas with raita, tomato, onion and lettuce.
Makes 10-12 patties
