Chili W/ Meat & Beans
Ingredients:
- 1 pound ground beef
- 1 ½ cup chopped onion
- 3 tbsp olive oil
- 3 cups tomato juice
- 1 cup beer (not dark)
- 3 tbsp chili powder
- 2 tsp ground cumin
- 1 tbsp oregano, preferably Mexican
- 1 tsp dried thyme
- 1 tsp ground pepper
- ½ tsp slat
- 2 cloves garlic, chopped
- 1 chipotle pepper, chopped
- 2 15-oz cans kidney beans, rinsed and drained
Instructions:
- Brown ground beef in a skillet over medium high heat, until it is cooked through.
- Drain the meat.
- Cooking onion in oil in a large pot over moderate heat until the onion is soft, about 5 minutes.
- Add the browned beef to the onions.
- Add the tomato juice and beer, then add the chili powder, cumin, oregano, thyme, salt, pepper, garlic and chipotle pepper.
- Simmer for five minutes and taste.
- Adjust seasoning as necessary.
