Chili W/ Meat & Beans

Ingredients:

  • 1 pound ground beef
  • 1 ½ cup chopped onion
  • 3 tbsp olive oil
  • 3 cups tomato juice
  • 1 cup beer (not dark)
  • 3 tbsp chili powder
  • 2 tsp ground cumin
  • 1 tbsp oregano, preferably Mexican
  • 1 tsp dried thyme
  • 1 tsp ground pepper
  • ½ tsp slat
  • 2 cloves garlic, chopped
  • 1 chipotle pepper, chopped
  • 2 15-oz cans kidney beans, rinsed and drained

Instructions:

  1. Brown ground beef in a skillet over medium high heat, until it is cooked through.
  2. Drain the meat.
  3. Cooking onion in oil in a large pot over moderate heat until the onion is soft, about 5 minutes.
  4. Add the browned beef to the onions.
  5. Add the tomato juice and beer, then add the chili powder, cumin, oregano, thyme, salt, pepper, garlic and chipotle pepper.
  6. Simmer for five minutes and taste.
  7. Adjust seasoning as necessary.
