Tzatziki (Yogurt Garlic Dip)

Ingredients:
1 Qt Plain Low Fat Yogurt, Drained
1 Medium Cucumber, Peeled, Seeded And Diced
1 Tbs Virgin Olive Oil
1 Tbsp White Vinegar
2-3 Cloves Garlic, Minced
1 Tbs Fresh Dill, Finely Chopped
1 Tbs Fresh Mint, Finely Chopped
1 Pinch Of Salt, Optional


If using commercial yogurt rather than homemade, you must strain it first. Place a clean double layered cheese cloth in a colander or strainer. Place over a bowl, add yogurt to the strainer and let stand 2-3 hours at room temperature or overnight in the refrigerator. You will find that the yogurt has lost about a 1/3 of its volume in water, which you discard. The remaining yogurt will be thick. Mix all ingredients together. Refrigerate overnight allowing all the flavors to blend. Serve chilled.
