Saltsa Kima(Meat Sauce) Ingredients: 2 Medium Yellow Onions, Finely Chopped 2 Tbs Extra Virgin Olive Oil 3 Cloves Garlic, Minced 1 28 Oz Can Tomato Puree 2½ Lbs Ground Beef 1 Cup Dry White/Red Wine 1 Tbs Granulated Sugar 1 Stick Cinnamon 1 Tsp Ground Allspice 1 Large Bayleaf Salt And Pepper To Taste Saute the onions and the garlic in the olive oil until soft, 2-3 minutes. Add the ground beef and brown. (other ground meats like lamb, veal, turkey and chicken may be substituted.) Add all the seasonings, wine and tomato puree and simmer for 40-60 minutes. Fresh basil and parsley may also be added to the sauce. Skim off any extra fat that appears on the surface. Prepare the sauce the day before and store in refrigerator.
