Pea Sauce for Any White Fish or Salmon
Ingredients:
2 oz white wine
3 oz of fish or chicken stock
1 lb of fresh sweat English peas
(if not - use frozen, not canned)
Cook 1 lb of peas in salted water. Drain. Puree cooked peas in blender with white wine and stock. Add salt to taste. In a saucepan reduce to desired thickness. When ready, re-heat add butter or olive oil and serve.
**Great with most white fish or salmon
**This sauce is also good with the addition of mint or tarragon.
