Fresh Strawberry Sauce

Ingredients:
1 Lb Fresh Strawberries, Trimmed And Halved
½ Cup Sugar
2 Tsp Fresh Lemon Juice
1/8 Tsp Vanilla Extract
1 Tbs Fraise (Strawberry), Framboise (Raspberry), Or Creme De
Cassis (Black Currant) Liqueur


In a large saucepan, combine the strawberries, sugar and lemon juice. Mash the berries with the back of a fork to release their juice, and bring the mixture to a boil over medium-high heat. Reduce the heat to medium. Continue to mash the berries as necessary, and simmer until they are soft through; approximately 15 to 20 minutes.

Transfer the berries and liquid to a blender or food processor. Puree them until smooth. Add the liqueur; pulse once or twice to barely incorporate it.

Cool the sauce to room temperature and refrigerate it. Keeps several days in the refrigerator. Makes 1 pint.
