Kerri's Famous French Onion Soup
Ingredients:
- 4 Lbs. Onions-peeled (preferably sweet onions; Vidalia, Bermuda)
- 4 T butter
- 8 C beef broth (can be substituted with chicken or veggie broth)
- 1 bouquet garni (fresh thyme sprigs, parsley, and a bay leaf)
- ½ C red wine
- Salt and pepper to taste
- ½ Lb gruyere cheese, grated (provolone, mozzarella ok)
- Thick slices of crusty bread, toasted
Instructions:
- Carmelize onions until transparent in color.
- Add beef broth, red wine and garni.
- Salt and pepper to taste.
- Let simmer.
- Toast bread in oven until crusty.
- Serve on top of soup in cups.
- Add grated cheese and bake until cheese melts on top of bread.
