Kerri's Famous French Onion Soup

Ingredients:

  • 4 Lbs. Onions-peeled (preferably sweet onions; Vidalia, Bermuda)
  • 4 T butter
  • 8 C beef broth (can be substituted with chicken or veggie broth)
  • 1 bouquet garni (fresh thyme sprigs, parsley, and a bay leaf)
  • ½ C red wine
  • Salt and pepper to taste
  • ½ Lb gruyere cheese, grated (provolone, mozzarella ok)
  • Thick slices of crusty bread, toasted

Instructions:

  1. Carmelize onions until transparent in color.
  2. Add beef broth, red wine and garni.
  3. Salt and pepper to taste.
  4. Let simmer.
  5. Toast bread in oven until crusty.
  6. Serve on top of soup in cups.
  7. Add grated cheese and bake until cheese melts on top of bread.
