Avgolemono (Greek Chicken Soup)
Ingredients:
- 4 Cups Homemade, Bouillon Or Canned Chicken Broth
- ¼ Cup Short Grain Rice Or Orzo
- 1 Egg, Well Beaten
- 2 Tbs Lemon Juice
Instructions:
- Bring chicken broth to a boil. Add rice or orzo. Cook until soft. Take off heat and allow to cool slightly.
- Whip or beat egg thoroughly. Add lemon juice and beat again. Set aside in medium size bowl.
- Slowly add chicken broth to egg mixture, beating all the time. Keep adding until most of broth is used. Then add egg and chicken broth mixture to pot with rice. Remember, if broth is too hot the egg will curdle. It still can be eaten but it will have little stringy lumps. The beating or aerating helps keep this from happening.
Options - when making homemade broth with chicken pieces and carrots and celery, chopped up chicken and vegetables from the broth may be added. Makes a more hearty soup.
