Fried Cod Fish, Saffron Basmati Rice, Vegetable Samosa & Yogurt Raita

Fried Cod Fish

Ingredients:
2 fish fillet wash and pat dry
2 tbsp chilli powder
½ tsp turmeric powder
¼ tsp sugar
1 tsp salt as or per your taste
¼ tsp oil
½ tsp lemon juice

Directions:

Mix all the ingredients into a paste and apply it to the fish.  Let this marinate for at least half an hour or two hours in the refrigerator.  This helps to get all the spices into the fish.  Pour some oil in the pan on medium heat.  Put the fish in the hot oil and fry for about 6 to 7 minutes on each side. 

Saffron Basmati Rice

Ingredients:
2 cups basmati Rice
1 tbsp Oil
1 tsp ginger garlic paste
½ tsp Biryani Masala
¼ cup onions finely sliced
2 tbsp chopped cilantro
2 tbsp chopped mint leaves
½ cup fried onions
1 tsp cumin seeds
2 pinch of Saffron soaked in little water
3 tbsp butter ( optional)
1 tsp salt or as per your taste
3 cups of warm water

Directions:
Wash rice and soak in water for 30 minutes.  After 30 minutes drain the excess water

Heat oil in a pan, add cumin seeds and onion.  Fry for few minutes then add ginger garlic paste, biryani masala, cilantro, mint leaves, and salt.  Sauté for a minute. 

Add 3 cups of water; let it come to a boil.  Now add rice and mix once.

When water is absorbed top it with fried onions, saffron soaked water, and butter cubes.

Put the lid and reduce to a minimum heat.  Let it steam for 10 minutes.

Vegetable Samosa

Ingredients:

1 packet Spring Roll pastry
3 large boiled potatoes diced
¾ cup boiled peas
1 tsp ground coriander powder
1 tsp ground cumin powder
1 tsp chilli powder
2 tbsp chopped cilantro
2 tbsp lemon juice
1 tsp salt
2 tbsp water
1 small onion chopped

Make the Filling:

Take a bowl put in diced potato, chopped fried onion, peas, spices, salt, chopped cilantro, and lemon juice.  Mix everything together.

Now take 2 spring roll pastry sheet cut them in center.  Take the half 2 ply sheets apply water on the sides, make a small triangle and stuff it with 1 tablespoon of stuffing.  Seal the cone using water making triangular in shape.

On medium heat pan heat oil.  Put in three samosas and fry them on one side until they brown.  Then turn them over and fry on the other side.

Lift them out of the pan on a plate lined with paper towel to absorb the excess oil.

You can serve them as an appetizer with tomato ketchup or spicy sauce.

Yogurt Raita

Ingredients:

1 cup plain yogurt
½ cup diced cucumber
½ cup diced tomato
¼ cup chopped cilantro or mint leaves
½ tsp salt
¼ tsp sugar

Directions:

Mix all the ingredients together with yogurt.  Serve chilled.
