Sweet & Savory Empanadas

Sweet & Savory Empanadas

3 cups flour
3 teaspoons baking powder
1 teaspoon salt
~1 ½ cups warm water (more or less as needed)
2 tablespoons Oil
Combine ingredients in a large bowl to create soft pliable dough, cover with a towel and set aside

Savory Filling
½ head thinly sliced cabbage
½ medium onion diced
1 diced zucchini
1 ear of corn with kernels removed from cob
Salt and pepper to taste
2 Tablespoons of oil to fry

Combine vegetables in hot pan to which oil has been added, quickly cook adding salt and pepper to your liking.

Sweet Filling
4 cups Seasonal Fruit diced (apples, pears, nectarines, peaches, etc)
½ cup Dry honey or cane sugar
¼ cup butter
Salt, Cinnamon, ginger, nutmeg, allspice to taste (about ¼ to ½ teaspoon)
In a hot skillet melt butter and lower heat, add fruit stir until coated add desired spice, set aside to cool use as savory filling as described below.

Set aside to cool
Break dough into several small (approx 2") Balls, one at a time roll into 4" circle add filling to middle, fold over and pierce closed with fork lay on a lightly oiled cooking sheet, slit top to vent and bake at 350 until golden brown (about 15 minutes) serve warm.
If desired salsa, sour or sweet cream may be served as accompaniment.
Alternate ingredients can be any fresh vegetables that fry well, ground beef, chicken or even leftovers.
