Mama Kikas' Mexican Meatloaf, Meatloaf Sandwich & Grilled Asparagus

Mama Kikas' Mexican Meatloaf
In a large mixing bowl combine:
4 lbs Ground Round at least 80% to 90% lean
1 can Black Olives chopped
8 Green Onions chopped
1 Green Bell pepper finely chopped
6 Garlic Cloves minced
2 Eggs
1 ½ to 2 cups of fresh Bread Crumbs w/ herbs (See Below)
2 small cans El Pato Sauce (look in the Mexican section of your market)
Garlic Salt

Preheat oven to 365 degrees
Split in half once well mixed and put into 8 by 10 greased baking dish spreading evenly.

Then evenly top this half of the meat mixture with:
1 small can Ortega Chili rinsed and seeds removed
6 to 8 ounces Pepper Jack cheese Sliced

Make sure that you leave a little room around the edges so that the cheese won't escape during cooking,

Now add the other half of the meat mixture being careful not to mess up the pepper and cheese. Spread out evenly and run your finger around the inside of the dish to create a seal so that the cheese won't escape.

Place in your preheated oven and set your timer for 45 minutes. After 45 minutes pull out of oven and carefully drain juices. Place back in oven for another 20 minutes or until cooked thru and browned on top.

Fresh Bread Crumbs W/ Herbs
In a food processor add:
½ loaf Sour Dough bread torn into pieces
2 Tbls Fresh Oregano (if available)
2 Tbls Fresh Parsley (if available)
Salt and Pepper
Pulse a few time then let run until the crumbs are all the same size.

Grilled Asparagus
1 Bunch of medium Asparagus (bottom half peeled)
1 Lime cut in half
1 or 2 Tbls Olive Oil
Salt and Pepper

Preheat grill pan over medium high heat:

In a dish or bowl add all ingredients except ½ of Lime. Mix and cover all evenly.
Spread out on the hot grill pan and cook until you see grill marks all around.

Do Not Over Cook.

Pull off grill pan and place on your platter. Squeeze the other half of the Lime on top and grind a little fresh pepper. Serve

Meatloaf Sandwiches
8 Slices Sourdough Bread lightly spread with Mayo
4 Slices Meatloaf
Red Leaf Lettuce
Ripe Red Tomato thinly sliced
Red Onion cut in half then thinly sliced
Avocado peeled, seed removed then thinly sliced
Salt and Pepper
Assemble like any other sandwich (be sure to season) then serve!
