Chicken Picatta, Chicken & Broccoli Alfredo & BBQ Chicken

Chicken Picatta:

2 boneless skinless chicken breast
¼ c. white wine
¾ c. chicken stock
1/4 c Olive oil
6 - 8 Cloves Chopped garlic
1 tsp Salt & Pepper
1 tsp Granulated Garlic
3 Tbsp Capers
3 Tbsp Butter (always unsalted)
1 Lemon
1 cup Flour
1 pkg angel hair pasta (cooked according to directions)

1. In a Ziploc bag add flour, salt, pepper, and granulated garlic. Close bag and shake till mixed. Place chicken breasts in bag, seal and shake till coated.
Remove breasts from bag shaking off excess flour, and set aside.
2. Add olive oil to a 10 inch sauté pan. Turn heat to med - high.
3. When oil gets hot (begins to shimmer and just about smoke), add chicken. Sauté approximately 3 mins on each side. Remove chicken and set aside.
4. Turn heat to medium, then add garlic and capers. Cook 1 min. Add wine and stock. Turn heat to high then add chicken.
5. Reduce liquid by half. Slice butter into 1Tbsp pats and coat each piece in flour. Add to sauce and continue to saute untill sauce thickens.

Chicken & Broccoli Alfredo w/ Penne Pasta

2 boneless skinless chicken breasts
½ c. Heavy Cream
6 - 8 Garlic Cloves Chopped
¼ c. Asiaggo or Parmesan Cheese
4 Tbsp Unsalted Butter
3 Tbsp Flour
1 c. Corn Starch
1 tsp Granulated Garlic
1 tsp Salt & Pepper
¼ c. White Wine
¼ c. Chicken Stock
1 Egg yolk
1 Broccoli Crown
1 Ziploc bag

1. Steam broccoli and cool. Cut in bite size pieces.
2. In a Ziploc bag add the flour, salt, pepper, and granulated garlic. Close bag and shake till mixed. Place chicken breasts in bag, seal and shake till coated.
Remove breasts from bag shaking off excess flour, and set aside.
3. Add olive oil to a 10 inch sauté pan. Turn heat to med - high.
4. When oil gets hot (begins to shimmer and just about smoke), add chicken. Sauté approximately 3 mins on each side. Remove chicken and set aside.
5. Turn heat to medium add garlic, sauté for 1 min.
6. Add wine & chicken stock, turn heat to high.
7. Reduce liquid by 1/2 , return heat to med.
8. Add the heavy cream, parmesan, butter and bring just to point of bubbling. Add egg yolk, (use a whisk when you add the yolk and stir quickly).
9. Add cooled cooked broccoli add toss a few times.
10. Add cooked pasta cook for 1 min to reheat pasta

Perfect BBQ Chicken

Preheat oven to 275 degrees
1. Mix 2 parts salt & 2 parts granulated garlic, to 1 part pepper.
Sprinkle over chicken.
2. Place chicken an inch apart in a deep baking dish 3. Fill baking dish with ½ inch of water. Cover tightly with aluminum foil.
4. Bake for 2 ½ hours,
5. Remove dish from oven and carefully open foil. Poke chicken with a knife. If liquid is clear chicken is done.
6. Preheat grill on med for 20 minutes. Brush chicken with favorite BBQ sauce. Place chicken on grill and cook on each side until sauce is seared into chicken.
