Mediterranean Grilled Tuna Sandwiches, Kalamata Olive Tapenade, Italian Style Orzo Salad & Jeff's Rockin' Trail Mix Guest Chef Jeff Lavia
Mediterranean Grilled Tuna Sandwiches
1/2 cup chopped parsley 1/2 cup chopped basil 1/3 cup fresh lemon juice The zest of two lemons 1/4 cup Extra Virgin Olive Oil, and a little extra Salt and Pepper 4 6 oz. Tuna Steaks Cooking Spray 4 Kaiser Rolls, split in half horizontally 1 cup Kalamata Olive Tapenade (recipe follows) Thinly sliced red onion 2 cups baby lettuce greens 8 slices tomato
Directions: 1. Combine the first 7 ingredients in a bowl, through the tuna and let sit for twenty minutes. 2. Get a grill pan smoking hot on the stove and coat with cooking spray. Grill the tuna for about 4 minutes on each side rotating every two minutes. Remove from the pan and set aside on a plate. 3. Rub a little EVOO on the kaiser rolls and place in the grill pan for about a minute or so per side. Remove from the pan and set aside. 4. Using a 1/4 cup of tapenade per sandwich, spread like you would mayonaise. And then layer as follows: on the bottom bread put two slices of tomatoes, and then some thinly sliced red onion, then the tuna steak and then the lettuce. Top with the other half of the roll and enjoy.
Kalamata Olive Tapenade
Yields about 1 cup
2 cups pitted kalamata olives 1/4 cup parsley 1/4 cup basil Salt and Pepper Zest and Juice of 1 Lemon
Directions: 1. Combine all ingredients in a food processor and process until smooth, will be a little chunky.
Italian Style Orzo Salad
1/2 lb or 1 cup uncooked Orzo 1 cup cherry tomatoes chopped 1/2 cucumber seeded and chopped 1/4 cup roasted red bell pepper chopped 1/4 cup parsley 1/4 cup basil Salt and Pepper Juice and Zest of 2 lemons 1/4 cup EVOO Crumbled Feta for garnish (optional)
Directions: 1. To roast the pepper, place a clean and dry pepper under a high broiler for about twenty minutes rotating every ten minutes until the pepper is completely charred. Put in a bowl and cover tightly with plastic wrap for 10 minutes. Remove from the bowl and remove the skin. 2. Cook orzo according to package directions. Drain and rinse under cold water and set aside. 3. In a large bowl combine the rest of the ingredients and add the orzo. Toss to combine and garnish with crumbled feta.
Jeff's Rockin' Trail Mix
Yield 4 cups
1 cup dried fruit, such as orange-cranberries or cherries 1 cup vanilla granola 1 cup slivered almonds 1 cup chocolate covered espresso beans
Directions: 1. Put all ingredients in a bowl and toss to combine.
