Israeli Salad & Rehydrating Soups

Israeli Salad

4 cucumbers, diced
2-5 large tomatoes diced
1-2 red bell peppers, diced
5 radishes, diced really fine
1/2 cup  black olives , piths removed and diced (optional)
2 Tablsepoons Olive Oil
1 lemon, juiced
1 tablespoon scallions, diced
1/4 teaspoon garlic, diced
1/4 tsp ginger, diced
Pinch of cayenne pepper (optional)
1/2 tsp Celtic Sea Salt
 
When chopping the cucumbers and tomatoes, be sure to keep the seeds and juice  and include that in the cups.  Place all the ingredients in a large salad bowl and  mix  well. Allow this to sit for about 30 minutes before serving.  ( Can place in the refrigerator  for the full  30 minutes if desired)

Chunky Tomato Basil Soup

4 cucumbers, diced
2-5 large tomatoes diced
1 Avocado (Diced),
1-2 red bell peppers, diced
5 radishes, diced really fine
1/2 cup  black olives , piths removed and diced (optional)
2 Tablsepoons Olive Oil
1 lemon, juiced
1 tablespoon scallions, diced
1/4 teaspoon garlic, diced
1/4 tsp ginger, diced
Pinch of cayenne pepper (optional)
1/2 tsp Celtic Sea Salt
 1-2 leaves of Basil  
 1 tsp pf Apple Cider Vinegar
 
Except for the  Diced Avocado, pour all the ingraedients into a blender , and mix until chunky but finely chopped. Serve in a bowl as is or in warm weather, chill in the refrigerator for a very refreshing and satisfying meal,

Smooth and Creamy  Raw Veggie Soup

4 cucumbers, diced
2-5 large tomatoes diced
1 Avocado ( oith removed)
1 glass of water
1/2 cup raw Cashews
1-2 red bell peppers, diced
5 radishes, diced really fine
1/2 cup  black olives , piths removed and diced (optional)
2 Tablsepoons Olive Oil
1 lemon, juiced
1 tablespoon scallions, diced
1 tsp Nutritional Yeast 
1/4 teaspoon garlic, diced
1/4 tsp ginger, diced
Pinch of cayenne pepper (optional)
1/2 tsp Celtic Sea Salt
 1-2 leaves of Basil  
 1 tsp pf Apple Cider Vinegar(optional)
 
Place all the ingredients in a blender until a smooth texture is achieved. Salt to taste before serving, Add more water if necessary.
