Greek Beef Burger, Apple Mushroom & Turkey Burger and Broccoli with Cranberries and Almond Salad

Greek Burger
1 lb extra lean ground beef
1/2 cup feta cheese, crumbled
1/2 cup olive slivers
3 cloves garlic, chopped
salt & pepper, to taste

Combine all ingredients in a large bowl.  Form into 2-4 patties, and then cook them in a large skillet on medium heat for 5-8 minutes on each side. 
Makes 2-4 servings

Apple Mushroom Turkey Burger
1 lb ground turkey breast
5 mushrooms, finely chopped
1 small onion, finely chopped
1/2 apple, finely chopped
1/2 Tbsp real butter
1 tsp lemon juice
1 omega-3 egg
1/2 tsp salt
garlic powder, to taste
salt & pepper, to taste

Cook the onions for 5-10 minutes until brown.  Add apples and mushrooms.  Stir-fry an additional 4-5 minutes.  Remove mixture from heat. 
Place all of the ingredients (both cooked and raw) into a large bowl and mix thoroughly.  Form into 2-4 patties. 
Grill them in a large skillet for about 5-8 minutes on each side.  The burgers are done when their juices run clear after being pierced with a fork.
Makes 2-4 servings

Broccoli with Cranberries and Almonds
2 large bunches fresh broccoli, cut into spears
1 cup chicken or vegetable bouillon
5 oz. slivered almonds
6 oz. dried apricots, diced
1 cup dried cranberries
2 Tbsp lime juice

Arrange cut broccoli in a steamer basket.  Bring bouillon to a boil and add basket to pot.  Steam broccoli, covered, over high heat for 5 minutes or until tender.  Drain.  Transfer broccoli to a large serving bowl.  Add almonds, apricots, cranberries, and lime juice.  Stir and serve.
