Taro Chips & Apple Salsa
2 fresh green granny smith apples (Peeled)
.5 cup diced red bell pepper
.5 cup diced green bell pepper
.25 cup finely chopped onion
2 table spoons olive oil
2 table spoons cilantro leaves
1 table spoon lime juice
Spinkle chives
1 table spoon italian parsley
sprinkle salt
sprinkle black pepper
Mix and bowl salsa

Chips
2 taro roots
Chop widthwise into chips
Broil for 7 to 10 minutes
Serve, dip with salsa

Orange Merlot Chicken Stir Fry W/ Green Tea Eggplant Rice
2 Chicken breasts
Stir fry sauce
Approx 2 cups freshly squeezed orange juice
1 cup merlot wine
1 clove garlic minced
.5 of lime juice
1 teaspoon of salt
1 teaspoon of black pepper
1.5 teaspoon of orange/lime zest mixed
Mix corn starch for saucy texture

Eggplant green tea rice
Peel and grate 2 eggplants with cheese grater Mix left over merlot sauce with eggplant, simmer Cook 2 cups of rice After rice is done, mix with eggplant and serve.
