Fantastic Vegetarian Chili

1 12oz bag burger crumbles (made from soy)
1 small onion chopped
1 clove garlic chopped
3 tbs. vegetable oil
½ red bell pepper chopped
1 can Mexican style tomatoes
1 can beans any ones you like
2 tbs. chili powder
1 tbs. cumin powder

Heat the oil, add the onions and bell pepper, sauté for a few minutes, add all the other ingredients, simmer for 10 minutes on a very slow flame.

Vegetarian Stuffed Zucchini

2 or more zucchinis
1 12oz bag burger crumbles (made from soy)
1 chopped onion
2 tbs. any oil
1 cup grated cheese (any kind you like)
¼ cup flavored bread crumbs
Salt & pepper to taste

Cut the zucchini in half, with a spoon remove the meat of the zucchini. Par-boil the zucchini for one or two minutes, remove and put in a bowl of cold water. In a skillet, heat the oil, add the onions, sauté until tender, add the crumbles, the chopped zucchini meat, bread crumbs, sauté for a few more minutes, remove and cool. Stuff the zucchini, top with the cheese, bake or broil for a few minutes.
