VEGETARIAN ORIENTAL NOODLE SALAD

1 package of udon noodles
1 red bell pepper sliced thin
2 scallions sliced diagonally
¼ cup peanut oil
2 tbs. soy sauce
1 tbs. sesame oil
1 tbs. chopped ginger
1 tbs. rice vinegar
1 clove garlic chopped or crushed
½ tsp. red pepper flakes
Salt & pepper to taste

Cook noodles according to package instructions, in a bowl, mix all the ingredients, blend well, add the cooked noodles refrigerate for one hour & serve.
