VEGETABLE PILAU

2 cups of Brown Rice (any kind)
(washed and rinsed)
41/2 to 5 cups of water (any temp)
1t salt (optional)
2 cloves
2 bay leaves
2 cardamoms (if whole, opened up seeds and all)
2 T butter
2 T Extra Virgin Cold pressed Olive Oil
1 C of fresh or frozen vegetables

In a 4qt saucepan, boil rice with all the ingredients except the vegetables.  Boil vigorously for 5 mins stirring occasionally.  Cover and cook on medium heat for another 5 mins.  When the water is almost evaporated, add the vegetables, stir and cover.  Simmer on low for 10 mins or so until all water is evaporated.  If additional water is required to cook, only add very warm water to maintain the temperature.  Once cooked, let stand for another 5 to 10 mins before serving.  Enjoy!
