SAFFRON RICE WITH COCONUT AND PINEAPPLE

1 Cup basmati rice
11/2 Cups boiling water
!/2 Lg. onion diced small
2 Tblsp. oil
! tsp. saffron
1/3 Cup diced pineapple
¼ Cup shredded coconut

In a sauté pan sweat the onions and saffron until translucent.  Add the rice sauté another couple of minutes then add the boiling water. Cover sauté pan and adjust burners to low. Cook for 20 minutes, do not uncover during cooking time. Before uncovering let stand for 5 minutes, uncover, fluff and serve.
