ITALIAN CHEESE CAKE

2 pre-made pie shells or pastry for lining bottom of pie dish (suggest 9")
3 pounds ricotta cheese
2 teaspoons vanilla
1 tablespoon baking powder
8 eggs
1 1/2 cups sugar
1 medium lemon zest, (optional)

In large mixing bowl add ricotta cheese, vanilla, baking powder, eggs, sugar and lemon zest (if used) and mix with electric beater until smooth. Add mixture to prepared pie dishes and smooth out with a knife. Bake at 350 degrees for 1 ¼ to 1 ½ hours until top of pie is golden brown. Don't over bake or it will be too dry.
