Baby Mixed Greens or Red leaf lettuce - shredded
1-2 fuji apples, diced and tossed in 1 tbsp lemon juice
½ cup walnuts, coarsely chopped and toasted - 300 degrees for 10 minutes
6 oz of crumbled gorgonzola cheese

Mix ingredients and toss with a dressing of

1 medium shallot
¼ cup olive oil
3 tbsp red wine vinegar
1 tbsp Dijon mustard
Dash of salt and dash of sugar.
