YUKON GOLD ROASTED POTATOES

3 large Yukon gold washed and dried
1 tsp dry thyme
3 tbls extra virgin olive oil
¼ tsp salt
¼ tsp fresh ground black pepper

Place baking sheet on top rack of oven and preheat to 500 for 5 minutes. Cut potatoes into 1 inch squares, dry with paper towel and place in a shallow dish with the oil, pepper and thyme. Toss well to coat all the potatoes and place in baking sheet.

Turn once after 10 minutes. When done salt immediately and serve.
