Farmers Market Stir Fry
Makes 6 servings.or a base for several other meals
This "stir fry" is tasty, and a time saving idea for busy moms and dads.
It's a wonderful way to get the whole family eating a variety of healthy, fresh from the farm vegetables. You can serve to toddler, or family just as it is with some tofu or beans and brown rice.
It also is makes a great base for the following healthy meals:
Omelets, scrambled eggs or tofu, veggie wrap, veggie pizza, pasta toss.
2 tablespoons extra virgin olive oil
1 medium zucchini
1 medium bunch of kale
1 cup diced carrots
2 cups broccoli florets
1 cup cauliflower florets
1 medium red bell pepper
1 medium bunch asparagus
½ medium red onion
2 cloves minced garlic
. Wash all vegetables well, and dice each into baby sized pieces. Place all into a large bowl and toss.
. Heat a large frying pan or stir fry pan over high heat, and add olive oil, then vegetables.
. Stir fry mixture for about 10 minutes (or until when a carrot is tested it is soft enough for baby).
. Remove from heat and spread out to cool in a platter or bowl before serving to baby, or packing away in the refrigerator for future use
