Festive Chicken, Shrimp & Veggie Fajitas
Ingredients:
- 1 lb chicken
- 1 lb shrimp (peel & devain)
- 1 green bell pepper sliced
- 1 red bell pepper sliced
- 1 large onion sliced
- 9 garlic cloves
- 5 limes
- 1 bunch of cilantro
- Salt to taste
- Chili powder to taste
- Pepper to taste
- Olive oil
- 8 tortillas
Instructions:
- Preheat Oven to 200 degrees & oil skillet w/ olive oil.
- Season bell peppers & onion w/ salt, pepper & chili powder sparingly. Sauté bell peppers w/ garlic first for about five minutes, then add onions into the skillets because onions cook faster. Once all veggies are cooked set aside and place in warm oven to keep food hot.
- Cut chicken in slices lengthwise. Season w/ salt, pepper & chili powder sparingly over each piece and then turn it over and repeat seasoning. Add 3 cloves of garlic. Sauté on skillet. Once chicken is cooked, squeeze lime juice over chicken and gently mix all ingredients and set aside.
- Peeled & devein shrimp and season the same way as the chicken (salt, pepper & chili powder sparingly) Add 3 cloves of garlic. Sauté on skillet until pink which indicates it is cooked. Squeeze lime juice over shrimp and gently mix all ingredients and set aside.
- Place tortillas in preheated oven to keep warm.
- Once all the ingredients are cooked, wrap veggies w/ chicken and shrimp and enjoy a holiday alternative w/ this festive fajita mix!
